Before moving on to the preparation method, I would like to highlight a little on the beans. The beans are roasted locally and I must admit that the way that it is roasted is very different from how one would do it in the west.
Using a blend of Arabica and Robusta, while roasting, generous dose of margarine and sugar are added into the blend to enhance the taste profile. So, the blend is incredibly sweet after the roast.
After that, it is further sweetened with sugar or condensed milk as the drink is being prepared. The condensed milk and sugar is scoop into the coffee cup while the coffee goes through a few rounds using the coffee socks.
Before the last few rounds, the coffee is poured into the cup, and then it is being "pulled" a couple of time by transferring it from one cup to another. The primary reason for doing this is to cool down the drink, the end result is you would end out with very nice looking froth.
The "pulling" might have change the taste of this coffee. The taste that you get from this type of coffee is very smooth and while sweet, it does not cloud the taste of the coffee. Although it
is not as intense as an espresso, for those looking for a new type of coffee drink, this is an interesting alternative to check out.
The taste and look of this kopi tarik varies from outlets to outlets and is very dependent on the person preparing it, and yakun quality is one of the best in the market.
